A liquor obtained by the acetous fermentation. Vinegar has a pungent odour, and a pleasant acid taste. One fluid ounce of the Acetum of the United States Pharmacopoeia is saturated by about 35 grains of crystallized bicarbonate of soda. It is refrigerant in fevers; antiseptic, and anti-narcotic; and externally is stimulant and discutient. Vinegar Whey is made by stirring a small wineglassful of vinegar, sweetened with a dessert spoonful of sugar, in a pint of milk; boiling for fifteen minutes, and straining. Like tamarind whey it is an agreeable drink in febrile affections.
